Adam is an accomplished and talented chef despite his young age, always in search of discovering new things about gastronomy at its finest. Experimenting with flavors and aromas, colors and textures, he constantly pursues uniqueness and authenticity with a creative twist in every single dish.

Born in Athens in 1985, Adam Kodovas received Culinary School Degree with honors and then continued on with some impressive forms of collaboration, gaining valuable working experience and cultivating his talent and mastery even further. Staging off at Funky Gourmet, he was able to work under pressure and deliver highest standards of quality in a restaurant that is now awarded with 2 Michelin stars.

Then it was time for 2Mazi, a cradle of Greek creative cuisine. Adam had the chance to work alongside one of the most important Greek chefs ever, Yiannis Baxevanis. Trying something entirely new, Adam went on to the James Joyce Irish Pub & Restaurant. He worked as sous chef of the restaurant being responsible for running service prepping, ordering and designing new and exciting dishes. This has been a great experience for him due to the chef being Irish and the kitchen was run under European standards.

Following his eagerness to create and challenge himself, Adam worked in the award winning restaurant “Danu at the Brehon” in Ireland, where he quickly climbed the ranks becoming chef de partie. Returning home, he continued advancing his career and worked at Amanzoe, preparing creative cuisine for some of the world’s most exclusive VIPs.

After a brief return at the James Joyce Pub & Restaurant and a total makeover of its menu that led to its recognition as the finest pub – restaurant in Athens, Adam followed his instinct at the Premiere of Athenaeum Intercontinental Hotel. Climbing up the ladder to chef de cuisine, Adam actively contributed to the acclaim of the restaurant as one of the finest in Greece and the award of Golden Chef’s Hat.

As a Head Chef this past year and among his multiple achievements and awards, Adam has been acknowledged as the Best New Chef for the year of 2015 by FNL magazine and received the Greek Cuisine Award. Finally, he has been voted by Athens Voice magazine in the dream team for New Greek Chefs. These past few months, Adam’s love and interest for fish and seafood took him all the way to Brussels in Belgium. There he worked for Sea Grill, a world renowned seafood restaurant boasting 2 Michelin stars, coming one step closer in being a fish and seafood virtuoso.

And now, the awarded Mylos Bar Restaurant in Santorini has called out to him. He is looking forward to creating distinctive dishes that set the trend in contemporary gastronomy. Using only the finest and freshest of ingredients, a cornucopia of high quality local produce and superb cooking methods, Adam Kodovas is bound to make a statement on the island’s gastronomic food scene…!
